Leftover Ham, Broccoli, and Cheddar Quiche

I luvvv quiche.  Love, love, love.  Not only is it easy to make if you have a premade pie crust, but it is hearty, filling, and packed with protein!  It's also packed with calories, which has led me in the past to try and make a "healthy" or healthier quiche.  Many people use heavy cream in their quiches, but I prefer the texture and taste of half and half, which is slightly less dense, but still tastes rich.  And the half and half it saves you a few calories.  Just be careful when making a quiche sans half and half or heavy cream because when you mess with the dairy component, you mess with not only the taste, but the texture.  And no one wants a loose quiche.

This recipe is great if you have leftover ham and want to make something other than a split pea soup (it reminds me too much of baby poop these days).  And don't worry about if your ham is sweet.  I used leftover Honey Baked ham and this was a hit.

You can serve quiche warm or room temperature.  I like to make quiche for dinner served warm with a nice side salad dressed in olive oil and vinegar and eat the leftovers for breakfast.  Today I paired the quiche with a side of bacon.
Today IS National Bacon Day after all...

Yes there is a "holiday" for everything.

Feel free to substitute the meet, veggies, and cheese to suit your favorite flavor profiles and let me know how it comes out.

Leftover Ham, Broccoli, and Cheddar Quiche
 Ingredients:
  • 1 tablespoon butter
  • 1/2 onion, white or yellow, diced
  • 1.5 cups leftover ham, diced
  • 1.5 cups broccoli, florets only, diced
  • 4 eggs
  • 1 cup half and half
  • 1/2 teaspoon salt
  • 1/2 teaspoon white pepper
  • 7 ounces mild cheddar cheese, shredded, divided
  • Frozen pie crust

Directions:
1. Preheat oven to 375 degrees.
2. Melt butter in medium saute pan over medium - high heat and saute onions until caramelized, about 5 minutes.
3. Meanwhile heat broccoli until just cooked, but still crisp.  I microwave for 30 seconds - 1 minute.
4. In a large bowl combine cooked broccoli, onions, and ham.  Set aside.
5. Beat eggs, half and half, salt and pepper until incorporated.  Set aside.
6. Fold in 6 ounces of cheese into ham and broccoli mixture and add mixture to pie crust.  Top with egg mixture and sprinkle remaining 1 ounce of cheese over everything.
7. Cook for 45 minutes or until eggs are set and cheese is browned.
8. Let quiche rest for at least 10-20 minutes before serving.

Ebates

Most people know about Ebates by now, but I still meet people who don't know about Ebates or use it for ALL their online shopping.

So for those of you who don't know Ebates offers cash back for all most of your online shopping.  I can't say all because there are still times that I will purchase something online and the site is not participating with Ebates (I'm talking specifically about Joyus...come on Ebates that site is the bomb!).

Ebates is super simple once you sign up here.
1.  Click the link for the site you want to shop at.  Clearly today it's all about Nordies.
2. Once you click the desired shopping site a new tab will pop open and take you to Nordstrom's website.
3.  Shop as you usually would and get a percent back off your purchase.  In this case 6%.

I swear it is that easy.  And then you get a big, fat check or money transferred to your PayPal account.
Right now when you sign up for Ebates you get $10 cash back and a chance to win a 2016 Toyota Highlander for doing nothing more then one extra click of your mouse before doing what you already did best.  Now you can do it better.  Seriously if you are not using Ebates to get cash back you are missing out on free money.  And while a $22.31 check may not seem like much, those checks add up.

Beauty Deals and Gifts

In addition to getting an awesome bag filled with fun samples for $10, Ipsy also offers deals on various beauty related goods at a fraction of the retail price that ship for free.  Normally I like the deals, but pass them up because I have to restrain myself or else I would buy, buy, buy.  But this month the deals are too good to pass up.
I love Pacifica Body Butter for the its moisturizing effects and the tantalizing smells.  You can use this as a hand cream or lather it from head to toe to smell delectable everywhere.  The two scents are Indian Coconut Nectar, my personal favorite, and Sugared Amber Dreams.
Indian Coconut Nectar is a sensuous and delicious blend inspired by travels to faraway destinations. This warm, sultry blend of coconut and delicate creamy vanilla is pure ambrosia.
Sugared Amber Dreams is a dreamy blend filled with sparkling sugar, heady vanilla and warm amber. An intoxicating aura of rainbow wishes, magic, and love for the bravest of hearts.
This is a great stocking stuffer.  Is it wrong that I want to buy two sets so I can keep one and give the others as a holiday gift?  For $7 (retail $12) I don't feel guilty about it.  Buy, buy, buy...

I can't believe this It Cosmetics Contour Palette is only $20!  I've wanted this kit forever so Merry Christmas to me.  I am obsessed with all things It Cosmetics.  This brand is top notch and easy to use.  I could go on and on, but I'll spare you.  If you are scared of the dark shades just remember that you can blend different colours for a more natural look.  Check out this how to video featuring the fabulous Jamie Kern Lima.
Plus, the word on the street is that this palette is great for darker skin girls.  If you already use this I would love to know what you think.

If you aren't already on Ipsy then you can't get these great deals so join here so I can get some points for your referral.

SEPHORA
I am loving this free gift from Sephora.
Sephora never disappoints with free gifts and samples and this bag is no exception.
Not only do you get a cute bag, but you get 8 samples of awesome products with the purchase of $25.
This offer is only good for an online purchase so take advantage of it while you still can.  Code is PARTYPICKS.

I love jane.com.  In fact, I've got all my friends addicted to jane.  I have to check out jane daily because you never know what deal will be featured and if you snooze, you may loose.  There are days where I don't see anything that suits my fancy.  And then there are days where I go a little kray.  After all, how much cute stuff can one deal website have?  A lot!

Remember deals are only for a limited time so when I see something I really want I buy it.  Sometimes I'll miss a deal and get lucky since the deal will come back on jane.  It's like Christmas!  I take jane very seriously.

And here for you are some of my absolute favorite things that are feature on jane today.  Trust me, these deals are worth getting.  Merry Christmas!
I'm obsessed with these sweaters.  I wear them everyday.  They look great over scrubs, dresses, jeans...you name it.  If you only get one color I recommend cobalt.  I get nonstop compliments every time I wear it (so I wear it often).
These are my all time favorite tops I own.  That's a big statement.  The cut is extremely flattering.  If you are small chested this will give you the illusion of a larger chest.  If you have a larger chest this will make you look like you have a gorgeous little waist.  I have every color of this top.  Dress them up with a statement necklace or faux fur vest or stay casual with the pocket cardigan on top.  Choices are unlimited!
My favorite skirt I own and I think I look better in it than the model.  Sorry!
I know selfie sticks are obnoxious, but my arms aren't long enough to take selfies with groups or of outfits.  And sometimes I like to be obnoxious.  Love my selfie stick!
I always loose my ear buds.  These are dirt cheap compared to Apple brand and work just as well.  You can control music and answer calls with the control near your chin.  Plus they come in cute colors.  I'm waiting until they make gold, but I love my pink buds.

I have mine with me and charged at all times.  It works like charm whether you are charging an iPhone or iPad.  I can even charge my phone in my scrub pockets while at work.  It is great for travel too.
This dress I just "had" to buy.  It is so cute and it screams vacation.  I had to get this beauty before it sells out.  Plus I'm a sucker for anything with fringe.

And these I didn't get, but I think are so cute if you have little ones:
Happy Hump Day and Happy Shopping!
